Seafood Paella

Have you ever wanted to make paella, but not known how, or not had enough time? Well, you're in the right place! If you don't know what paella is, it is a Spanish seafood dish, made with spices and rice. →!

I made this when I was at my grandparents house, and we were going to  have this for dinner. We also made beef noodle casserole, because some people in our family don't like paella 😦.

This recipe for paella (serves four) is super easy to make; fry 1 chopped onion in 1 tablespoon olive oil, then mix in 1 teaspoon of hot smoked paprika, 1 teaspoon of thyme and 300 grams risotto or paella rice. Stir for one minute, then pour in 3 tablespoons dry sherry or white wine (optional). Once it has evaporated, splash in 400 grams (1 can) chopped tomatoes and 900 millilitres/1.5 pints chicken stock. Season with salt and pepper and then cook, uncovered, for 15 minutes. Stir now and again until the rice is almost tender and still surrounded with some liquidy stuff.

Stir in 400 grams (1 bag) frozen mixed seafood into the pan and cover it with a lid. Simmer for five minutes or until the seafood is cooked through and the rice is tender (you can test it!). Squeeze over the juice of half a lemon. 

Sprinkle over some chopped parsley and serve with a wedge of lemon. As it was such a lovely day, we ate this outside on the patio. It tasted even better! This paella was so easy to make, and so delicious. I will definitely make this again!
