Tomato and Mozzerella Salad
Hi again! Today I'm going to tell you how to make this salad 个. It's really easy and delicious, especilly on a hot summers day. Here's how you make it:
Whisk together 2 tablespoons of extra virgin olive oil, 1 tablespoon balsamic vinegar and some seasoning. Stir in half a red onion, finely chopped, and 1 tablespoon small capers, drained (I didn't use capers - to me they taste gross!). In a large bowl stir together 300 grams mixed colour tomatoes, chopped, 100 grams mozzarella pearls, half an avocado, peeled, chopped and destoned, and a small bunch of shredded basil leaves. Pour over the dressing and then gently toss to combine. If you like, you could serve them with extra basil leaves to garnish.
This salad is delicious on it's own or as a side to a bigger meal. We ate it as a side - the day I made it was when we were at our grandparents house, and for lunch we had a big cold buffet. It was great. especially as we sat outside!
