Ginger, Cherry and Chocolate Chip Cookies


Hello again! A while ago, during SATs week actually, I had to do a presentation in school with a group of my friends about how amazing we were. (There were lots of fun competitions and this was one of them!) Since I love baking, I made these deliious cookies for the whole of our year group - and the teachers - in total I made 102 cookies! They are really easy to make, and really yummy too!

If you want to make some of these cookies, then read on for how to make about 16 (not 102!!)

First, preheat your oven to 190°C, then grease one large baking tray or two small ones. Next, sift 4oz of self raising flour, 1 slightly rounded teaspoon ground ginger and 1tsp bicarbonate of soda into a bowl. Add 1.5oz of granulated sugar, then lightly rub in 2oz of block margarine (not tub margarine) until the mix is crumbly. Once it looks like breadcrumbs, add in 1oz of chocolate chips or chunks and 1oz of chopped glace cherries.  Next, add in 2oz of golden syrup. Mix the golden syrup in until the mix looks like a thick paste - this takes time! I started mixing with a wooden spoon and at the end I kneaded it for a bit.

Finally, roll the mix into about 16 balls. I find it easier if you split the mix into four, them split each of those into another four balls. Does that make sense?!? Before putting them onto a tray, flatten each of the balls slightly, then cook them in the oven for about 8 minutes. When they are cooking, watch them like a hawk; they should be light brown when they are cooked, but they go dark very quickly as I experienced the hard way in one of my batches! But before taking them off the tray, leave them to cool slightly and harden, otherwise they will break easily.

After  the cookies have cooled, then you can eat them!  They taste really good whe they're warm, but also when they ave hardened a little too. If you don't like the glace cherries, then you can just leave them out. The cookies will still taste just as good!
