Pasta with a famous chef! - Part 2 (read on)

1. This is tagliatelle - a bit like spaghetti but thicker. It has wild garlic pesto mixed in - the recipe from my last blog (link above). You will need some pasta base for this recipe, so see the link on how to make it, and you can do it with or without a pasta machine. With a pasta machine, roll it through the rollers a couple of times, folding in half each time. Put the pasta machine on the next lowest setting (you should start on the highest) and repeat. When you get to the middle setting, you don't need to fold the pasta in half anymore - it is the right consistency. WARNING!!! Before rolling through the rollers, cut in half. When I did mine, half of the sheet was almost 1.5m long! Then roll the pasta through the blades of your choice to cut it. If you don't have a pasta machine, then roll out as thinly as possible with a rolling pin then cut with a sharp knife instead. To find out if it is thin enough, slip a sheet of newspaper underneath it. If you can see the print through the pasta, then it is thin enough. You don't have to be able to read the article though! To cook, drop into a pan of boiling water for 1-2mins. Since it is fresh pasta, it doesn't take as long to cook. Next, mix through the pesto and serve! If you like, you can put some herbs on top.

2. This is tortellini, a bit like ravioli but smaller and a bit more fiddly to make. First what you need to do is make some pasta mix (you will probably know by now that the link is at the top of the page!) and some of the mixture from the gnocchi on my last asta blog. Look for the link! ↑ Now that you have both the ingredients, I can tell you how to make them. First, cut some circles with a cookie cutter out of a pasta sheet. Then, put a little ball of gnocchi mix on top, and using your finger, wet the pasta around the ball of mix. Then, fold it in half - the water is like a glue that will stick it together. Now you should have a semi-circle. Put a little bit of water on each corner of the semicircle, and wrap it up so it looks like the picture on the right. Definitely not complicated, hey?! These will be used in the next recipe, so look below!

3.This is tortellini and ravioli on the plate on the left. You might not be able to see the ravioli - it is buried underneath the tortellini!! Ravioli is like tortellini but a lot less complicated to make! All you need to do to make this delicious dish is to make a sheet of pasta, then place it onto a worktop or table. Cut out squares of pasta, all of them roughly the same size. Then place a spoon of the gnocchi mix (from my other pasta blog - you know where the link is ↑) in the middle of a square. Like you did with the tortellini, dab water all round the mixture with your finger, but this time place another square on top of it and press down gently to seal. Cook with the tortellini in a pan of boiling water for a couple of minutes, it will float when it is cooked. Then drain and put into a frying pan with some salted butter. Add in a few sage leaves if you like and fry for another minute or two. You can serve with some fresh herbs like basil. I also put on some wild garlic flowers for decoration.
