Junior Bake Off Challenge 4 - My Franken-dessert: Banoffee Eclairs (Dessert Week)








So this week on JBO it was Dessert Week, and this was one of the ones I was most looking forward to 😃. I decided to make this 'Franken-dessert' because it looked interesting and you need to put a lot of thought into it, to make sure it looks good, and to make sure it TASTES good too 😋.

It took me a while to decide what to do for this, and in the end I just wrote down a list of all my favourite desserts and paired them all up. In the end I was decideing between Banoffee Eclairs and Eton Mess Eclairs... it was a hard choice to make but I'm glad I did it... they turned out delicious!!
Before this, I had never made eclairs before - although I had made profiteroles, which were actually really easy. I also chose Banoffee Pie as my second dessert because it is quite a simple dessert to make, with not many ingredients and it is delicious... which is the main thing! After I had got the idea for my dessert, it was relatively easy to put the whole thing together, and I got it done quite quickly. 

To start off, I just made normal eclairs, from a recipe I found in one of my cookbooks. I ended up using a slightly larger piping nozzle than it said in the recipe, but I ended up making about the same amount that it said ðŸ¤·

I‍ baked them and while they were cooling, I sorted through my baking drawer (it turns out that I have a lot of out of date sugarpaste... and I mean a LOT). I then whipped some cream (although I overwhipped it a bit.. but thankfully not that much), and piped it all along/inside the eclair. I opened it up and piped a line all along the inside, then covered it up by piping lots if little stars on top of it. The rest of it was quite simple - I sliced some banana, then cut each slice into quarters and placed it on top of the whipped cream. I also melted some chocolate, and drizzled that over, and I melted some caramel slightly and drizzled that over too.

I took one for my sister and my mum to try, and they said it need more chocolate and more caramel. I put more on, and took another one in for them to try... this time they said just a bit more chocolate (although to be honest I think they just wanted more of my delicious eclairs!!)

Once they were perfect, we ate them, and they were rated by my judges...

  • Make sure the cream doesn't become overwhipped
  • Make them bigger 😂
  • They were delicious
So, not bad overall!! I also think that I could've piped the dough using a wider nozzle, or just pied them bigger as they didn't come out the size I wanted them to. Overall, though, I would love to do more versions of these - I think they would be delicious!
