A Day Of Baking!

Hello again! Wow, what a busy day...all I have been doing is baking, baking, baking! In the morning  I ran a pancake stall at our local school toysale, then in the afternoon, I made even more sweet treats - chocolate truffles and honeycomb... delicious!




The pancake stall is something I have been planning for quite a long time, actually. We were fundraising for our school, and eventually we raised about £60! We donated half of it to the school, and kept the rest for ourselves.It took ages to work out all the prices, and the toppings, and the amount of ingredients we needed, and all the equipment - but we still forgot some things (a measuring jug and a tea towel!). The picture on the left is of me and my sister running the stall - I am on the right and my sister is on the left.


We had lots of different toppings on our stall, which is definitely a change from when we usually have pancakes at home, with just lemon and sugar! These were our toppings - lemon and sugar, then salted caramel, millionaires shortbread and chocolate spread and banana! But since this was our first time running a stall, we had a lot of leftovers! We didn't know how many people would want each topping, so we had lots of leftover crushed biscuit from the millionaires shortbread topping. This brings me on to the next delicious thing I made that day - chocolate truffles!

The truffle recipe I used to make these truffles is different to what I've made before - these ones include crushed biscuit. You can roll them in sprinkles, popping candy (I did that), cocoa powder, more crushed biscuit, anything really... Plus they are easy-peasy to make - all you do is cream together some butter, sugar and golden syrup, then beat in some cocoa powder amd the crushed biscuits, shape them, and then put them in the fridge until they're firm!

And finally... The honeycomb! I love honeycomb, it's so chewy, crunchy and delicious! When you are making it, you have to be careful - it is boiling sugar you are working with! To make it, all you need to do is line a tray with baking paper, then heat 25g light brown soft sugar, 125g caster sugar and 4tbsp golden syrup in a pan until the sugar has melted - at this stage it is quite runny. Leave it to bubble vigorously for 1 minute. Meanwhile, measure out 1tbsp bicarbonate of soda and bring over your tray. Once the minute is up, turn off the heat and stir in the bicarbonate of soda. Stir it in quickly - it should bubble up lots. Pour it onto your tray imediately and leave it to set, but do not touch it, even if it looks hard - the inside will still be really hot!

So, after this day of baking, I was tired out! We ate the truffles that night for pudding after dinner (obviously not all of them!) and the honeycomb the next day as a snack - it went quite soft and sticky for some reason overnight. Maybe it was still too soft when I put it away in the tin! But anyway, it tasted delicious!
