Cinnamon and Apple Swirls


At the weekend, I made some cinnamon swirls, but with a twist; inside they have apple and raisins, which gives it lots more flavour!

The ingredients you will need follow:

For the filling:
  •  4 green apples (I used 2 as the ones we grow in our garden are massive!)
  • 1tsp cinnamon
  •  50g unsalted butter
  • 100g light brown soft sugar
  • 100g sultanas  or raisins

For the dough:
  • 450g self raising flour
  • 1/2 tsp salt
  • 2tbsp caster sugar
  • 100g unsalted butter, melted
  • 2 medium egg yolks
  • 200ml semi-skimmed milk, plus extra for glazing
The first thing you need to do is make the filling for the swirls. You need to peel the apples, and cut out any bruises or bad bits, and then grate them. Place them into a pan with the cinnamon, butter , brown sugar and raisins or sultanas. Heat this over a gentle heat, until the liquid has been absorbed, or reduced. Turn off the heat and pour the apple mix into a bowl and leave it, until it is completely cool.

Preheat the oven to 180°C (if you have a fan oven, a bit less).

Next, grease a 20cm round cake tin (I did two smaller ones and ended up with two seperate rounds, only one of them is in the picture). Next put the flour, salt and sugar into a bowl and give it a quick stir. Next place the melted butter, the egg yolks and the milk into a seperate bowl and mix them together until the egg yolks are beaten in.

Grab your dry ingredients and make a well in the centre. Pour in the wet ingredients in and give it a good mix with a spoon, then sprinkle some flour onto the worktop and lift the dough out of the bowl. Knead it with your hands until the dough is smooth and not sticky. Now roll the dough out to a rectangle of about 30cm x 25cm. It doesn't have to be exact, this is only a rough size.

Once it is rolled out, spread the apple filling out onto the dough, right to the edges. Now roll up the dough, starting at the long edge. Cut it into about 10 equal pieces, and then turn them on their sides. Squeeze them slightly - this will help them stick together when they are baking.

Place the swirls into your greased tin, or tins, and brush the tops with the extra milk. Put them into the preheated oven for 30 - 35 mins, until the tops are golden brown and they start to look like they are coming away from each other. Leave them to cool completely in the tin.

Once they are cool, remove them from the tin (just carefully tip the tin out onto a cooling rack, then turn the rolls the other way up). I sprinkled them with a little icing sugar, then when we were all ready to eat them, I tore them apart!

These were actually really nice, especially because the apple and raisins give the rolls a lot of flavour. We mainly ate them in lunchboxes, or as snacks for school!
