Foolproof Chocolate Brownies
Brownies. Some say they are really hard to make - but I have found an easy, foolproof recipe for them which has never failed for me. Luckily, they are suitable for freezing - so you can just make loads and loads, then store them in the freezer - you will have endless chocolate brownies! Here's how you do it -
You will need:
225g unsalted butter
125g plain chocolate (Make sure it is Fairtrade chocolate!)
3 eggs
275g caster sugar
175g plain flour
175g self-raising flour
25g cocoa powder
125g white chocolate chips
- The first thing you need to do is preheat the oven to 180°C - if you have a fan oven, then it will be 160°C.
- Cut up the butter so all the pieces are roughly the same, and put it in a bowl with the chocolate, broken up. Now put the bowl on top of a pan of boiling water, making sure the bowl does not touch the water. Turn on the heat and stir together the chocolate and butter until they have both melted.
- Meanwhile, beat the eggs and the sugar together until they are light and thick. Pour in the chocolate mixture and gently mix them together until they are combined. This usually takes a while, but it does come together in the end!
- Next, mix together the two flours, the cocoa powder and the white chocolate chips together. Pour the chocolate mixture into this, and then mix them together.
- Grease a deep baking tin and line the bottom with greasproof paper. This is definitely my least favourite part of baking, but it has to be done!
- Pour the mixture into your tin and bake it for about 30 minutes (check it after 20 mins). You have to keep an eye on these brownies when they're in the oven - depending on what size tin you have, the brownes will take different times to cook. I used a 28cm x 35cm tin, and baked them for 30 minutes. The brownies were a little dry, but we ate them with ice-cream, so they tasted great!
- When you take your brownies out of the oven, the top of them should look like it has a skin, and it should be cracked. If you shake the tin, they should wobble slightly. If you like your brownies to be a little gooey on the inside, take them out of the oven a little earlier.
- Leave them to cool completely in the tin, then slice them into squares and serve, or cut them up and put them in an airtight tin until you are ready to eat them - or like I said earlier, just freeze them!

So, there you have it! The easiest, most delicious chocolate brownie recipe EVER! Honestly, they are actually really good - I'm not just saying that. Plus, you can eat them with anything really - ice-cream, cream, fruit..... The possibilities are endless!
